In Slovakia we eat a lot of soups. Lentil soup is one of the most popular. Each lunch menu consists of a soup and a main dish. Lentil soup is quite heavy and rich and perfect for cold winter evenings.
Ingredients:
140 g brown lentils
40 g flour
1 onion
lard
1 clove of garlic
1 carrot
2 potatoes
Soak the lentils in the water over night. Cook the lentils untill they are soft. In a large pot heat lard and saute the onion. Add flour and red pepper, cook for 10 minutes. Add roux to the soup. Add salt and garlic. After that cut the potatoes and the carrot and add to the soup. Cook for 20 minutes.
